30-MINUTE THAI CHICKEN COCONUT CURRY RECIPE

Ingredients:

2 tbsp coconut oil

1-lb boneless skinless chicken breasts, cut into small pieces

1 onion, diced

4 cloves garlic, minced

1 tablespoon ground ginger

1 tablespoon ground coriander

1 1/2 c coconut milk (or 1 13oz can coconut milk)

2 c shredded carrots

2 tablespoons red curry paste

1 teaspoon salt

1/2 teaspoon black pepper

4 c fresh spinach or kale

1/8 c brown sugar

1 bunch cilantro, chopped

Lime wedges

3 c cooked basmati rice

Step 1: Place a large skillet on the stove and turn the heat to medium.

Step 2: Add the coconut oil and allow it to become hot.

Step 3: Add the onions and sauté for about a minute or until translucent.

Step 4: Add the chicken slices and cook until brown.

Step 5: Add the garlic, coriander, and ginger. Stir and cook until aromatic.

Step 6: Add the coconut milk, shredded carrots, red curry paste, salt, and pepper. Stir until well mixed.

Step 7: Simmer the mixture for about 5 minutes. Make sure to stir from time to time.

Step 8: Add the spinach and brown sugar. Stir and cook for about 3 more minutes or until done.

Step 9: Serve hot over rice and enjoy!

Note:

Serve with lime wedges and chopped cilantro.

Ingredients:

4 ounces salmon fillets, skinless

2 sheets puff pastry

2 cups frozen spinach, thawed and squeezed to discard any excess water

egg for egg wash

Sauce:

2 tbsp Dijon mustard

2 tbsp mayonnaise

1/2 lemon, squeezed

2 tsp honey

Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 5: Top the sauce with about half a cup of spinach.

Step 6: Brush the sides of the pastry with the egg wash, then fold them.

2 lbs skirt steak, thinly sliced

2 tbsp cumin

2 tbsp paprika

1 tbsp salt

2 tbsp garlic powder

1 tbsp dried oregano

1/2 orange juice

1/4 c lime juice

2 large onions, one thinly sliced and one whole

2 bell peppers, thinly sliced

2 red bell peppers, thinly sliced

2 tbsp olive oil

Tortillas, warm

Cilantro

Lime wedges

Directions:

Step 1: Prepare the oven and preheat to 218 degrees C or 425 degrees F.

Creamy Cajun Shrimp pasta

What a dish! Oh, man, you have got to give this recipe a try! If you are looking for the perfect dish to serve for lunch or dinner, then you need this Creamy Cajun Shrimp Pasta! Feel free to add more ingredients if you prefer. I have listed all the things you need so all you have to do is to follow them step by step and you are good to go. Enjoy!

Ingredients:

1 pound shrimp deveined and cleaned

8 ounces linguine

1 tablespoon oil

1 teaspoon Cajun seasoning

1 cup half and half

2 tablespoons butter

2 cloves garlic minced

A few sprigs of chopped parsley

1 Roma tomato diced small

1/4 cup parmigiana Reggiano

1 tablespoon lemon juice optional

salt and pepper

Step 1: Use paper towels to pat dry the shrimp.

Step 2: Season the shrimp with Cajun seasoning, salt, and pepper.

Step 3: Refer to the directions provided on the package of the linguine on how to cook it.

Step 4: Place a large pan on the stove and turn the heat to medium.

100g/3.5 ounces pancetta finely chopped

80g/ ½ c Parmesan cheese

4 Eggs large

1 pound spaghetti

2 garlic cloves peeled and crushed

1 tablespoon butter optional

salt

Step 1: Refer to the directions provided on the package of the spaghetti on how to cook it.

Step 2: Meanwhile, place a large pan on the stove and turn the heat to medium.

Step 4: Add 1 tablespoon of butter and 1 garlic clove. Cook for about a minute, then remove the garlic.

A big thanks to my dear friend, Anita, for this spectacular recipe! Oh, man, you need to give this one a try! If you are a huge fan of blueberries, this will suit you perfectly. Enjoy!

Ingredients:

2 c all-purpose flour + 1 teaspoon for rolling berries

1 tsp baking powder

1/4 tsp baking soda

2 large eggs – room temperature

1 c granulated sugar

1/2 tsp fine salt

1/2 c vegetable oil

1 tsp vanilla extract

1 c sour cream

1 1/2 c fresh blueberries – rinsed and dried

Directions:

Step 1: Line with cupcake liners a muffin tin with 12 cups.

Step 2: Prepare the oven and preheat to 190 degrees C or 375 degrees F.

Step 3: Add 2 eggs, 1/2 teaspoon of fine salt, and 1 cup granulated sugar into a large mixing bowl. Beat for about 5 minutes or until done.

Step 4: Add the vegetable oil, sour cream, and vanilla. Beat for 30 seconds or until well blended.

Step 5: In another mixing bowl, add 1 teaspoon of baking powder, 2 cups of flour, and 1/4 teaspoon of baking soda. Whisk until well mixed.

Step 6: Gradually transfer the dry ingredients into the wet ingredients and beat until well mixed.
