Ingredients:
⅓ c breadcrumbs
1 clove of garlic, grated fine
1 c shredded zucchini drained well
1 tsp chopped fresh basil (or ½ tsp dried)
1 tsp chopped fresh oregano (or ½ tsp dried)
tomato sauce for dipping
1 tbsp chopped fresh parsley (or ½ tbsp dried)
¼ c grated Parmigiano-Reggiano cheese
A pinch of salt and pepper
2 tbsp chopped fresh chives (or 1 tbsp dried chives)
1 large Egg
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Apply cooking spray onto a baking sheet.
Grate the zucchini with a box grater, then put them onto a clean towel. Wrap the grated zucchini, then twist the towel to remove excess water. Grate the garlic as well.
In a mixing bowl, add egg, Parmesan cheese, shredded zucchini, egg, garlic, salt, pepper, parsley, oregano, and basil. Stir everything until well mixed.
Use your clean hands to shape the mixture into small balls.
Lay the Zucchini Garlic Bites onto the prepared baking sheet and arrange them in a single layer. Make sure to leave a small space between each ball.
Place the baking sheet inside the preheated oven and bake the Zucchini Garlic Bites for about 15 to 18 minutes or until they turn golden brown.
Remove from the oven and let them cool for a few minutes.
Serve with marinara sauce. Enjoy!
Notes:
Cool, the Zucchini Garlic Bites completely at room temperature on a baking sheet, then place them inside the fridge for an hour. Transfer them inside a freezer bag, then put them back in the freezer. They can last up to 4 months.
Reheat in the oven preheated to 400 degrees F for 10 minutes.
