I make this all the time. It balances any greasy meal. It is also very easy to make. All you need to do is to combine all the ingredients and let the oven do its magic! Feel free to add more ingredients though if you prefer. For example, if you want it to become meaty, add crispy bacon on top after baking it. I have tried adding fried garlic as well. It’s the best! Ingredients:
2 medium zucchinis, quartered and cut into large pieces
4 medium potatoes, peeled and cut into large chunks
1 medium red bell pepper, seeded and chopped
1 clove garlic, sliced
½ cup dry bread crumbs
¼ cup olive oil
paprika to taste
salt to taste
ground black pepper to taste
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Prepare a medium baking pan.
Step 3: Add in the potatoes, zucchini, bread crumbs, garlic, and red bell pepper. Drizzle with olive oil and toss the pan to mix the ingredients.
Step 4: Season with paprika, salt, and pepper to taste.
Step 5: Place inside the preheated oven and bake for 1 hour or until all the ingredients are cooked and tender. Stir it occasionally to prevent it from sticking from one another.
Step 6: Remove from the oven and let it sit on a wire rack to cool at room temperature.
Step 7: Serve and enjoy!
