Even after all the other dishes competing for attention during Sunday brunch, the one I remember most was a delicious pea salad with Cheddar cheese, sweet onion, and a light, creamy dressing. I don’t even want to think of loads of food that I’m expected to consume over the years, but I loved it, and I still love it today. It is a fun, easy salad that is perfect for any spring or summer gathering but is especially nice for Easter as it bursts with beautiful peas. Ingredients:
For the Salad:
2 (6 oz) packages frozen peas, thawed
1 pound cooked bacon, chopped
1 cup golden raisins
1 (8 oz) package shredded Cheddar cheese
(1) sweet onion, chopped
½ cup sunflower seeds
For the Dressing:
1 cup mayonnaise
2 tbsp wine vinegar
¼ tsp white sugar, or to taste
Directions:
In a large bowl, toss peas, bacon, raisins, Cheddar cheese, onion, and sunflower seeds. Stir the mayonnaise, vinegar, and sugar in a small bowl, then drizzle over the salad and to toss to coat.
Use a plastic wrap to cover the bowl and refrigerate for an hour.
