1 cup shredded Cheddar cheese
(2) eggs, beaten
¾ cup milk
¼ cup butter, melted
1 tsp salt
ground black pepper to taste
2 tbsp butter
Directions:
Preheat 400 degrees F (200 degrees C).
In a large skillet, add and pour in a small amount of water, and cook the squash and onion over medium heat. Cook until tender for about 5 minutes. Drain thoroughly, and put the cooked squash and onion in a large bowl.
Add and mix the cracker crumbs and cheese in a medium bowl.
Add and combine half of the cracker mixture into the cooked squash and onions.
In a small bowl, add and whisk in eggs and milk, then add it to the squash mixture. Stir in ¼ cup of melted butter, and season with salt and pepper.
Pour mixture into a 9 x 13-inch baking dish and sprinkle with the remaining cracker mixture, and then dust with 2 tbsp of butter.
Add and place inside the preheated oven and bake for 25 minutes or until lightly browned. When done, remove from the oven. Serve and enjoy!
