Mouthwatering and super savory! This succulent wine-braised chicken is the ultimate dinner option that your family will love!
INGREDIENTS
2-3 cloves fresh garlic, smashed
3 large chicken breasts fillet into 6 thin cuts of chicken breast
2-3 tbsp olive oil, divided
1 medium onion, sliced into thin rings
1 c. red wine
Kosher salt to taste
Ground black pepper to taste
2 tbsp tomato paste
Water (optional)
1 14.5-oz. can of chicken broth (you can also use beef broth if that’s what you have on hand)
How to make Wine Braised Chicken (Drunken Chicken)
Step 1: Heat 2 tbsp olive oil in a large skillet over medium-high heat.
Step 2: Using paper towels, pat the chicken dry and season both sides with salt and pepper.
Step 3: Place the chicken into the hot oil in the skillet in batches and sear for about 1 to 2 minutes on each side until brown. Into a side plate, transfer the seared chicken. Repeat with the remaining pieces of chicken.
Step 4: If needed, add the rest of the oil into the pan once all the chicken is seared and out of the pan. Then, add the sliced onions along with the smashed garlic. To taste, season with salt and pepper. Cook for about 1 to 2 minutes, stirring often.
Step 5: Pour in the wine. Using a wooden spoon, scrape the bottom of the pan to release the brown bits. Let the wine, simmer for about 1 to 2 minutes before adding the broth and tomato paste. Stir well, then return the chicken to the pan.
Step 6: Bring everything to a boil. Then, adjust the heat to medium once the mixture is boiling. Put the lid on and allow the mixture to simmer for another hour, stirring often. Add a splash of water if the mixture begins to dry out.
Step 7: Take the pan off the heat when done and serve the Drunken Chicken right away. Enjoy!
