Ingredients:
10 soft taco shells
2 c cooked, shredded chicken
2 c shredded Monterey jack cheese
3 tablespoons butter
3 Tablespoons flour
2 c chicken broth
1 c sour cream
1 (4 ounces) can dice green chillies
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in a 9×13-inch baking pan.
Step 3: In a mixing bowl, add 1 cup of cheese and chicken. Stir until well mixed.
Step 4: Place the mixture in the middle of the tortillas and roll it up. Place them in the prepared pan.
Step 5: Place a saucepan on the stove and turn the heat to medium.
Step 6: Add the butter and allow it to melt.
Step 7: Add in flour and stir for a minute.
Step 8: Add in the broth and whisk until well combined and thick.
Step 9: Add in the chillies and cream. Stir until well mixed. Make sure not to bring to a boil.
Step 10: Remove from the heat and pour the mixture over the enchiladas.
Step 11: Sprinkle the rest of the cheese on top.
Step 12: Place it inside the preheated oven and bake for 22 minutes.
Step 13: Broil for another 3 minutes until the cheese turns brown.
Step 14: Remove from the oven and allow it to cool at room temperature.
Step 15: Serve and enjoy!
