Ingredients:
16 ounces of refried beans
8 ounces tomato sauce
10 ounces enchilada sauce
1 pound of ground beef
½ c chopped onion
1 teaspoon cumin
½ teaspoon salt
2 teaspoon minced garlic
15 ounces chili no-beans (Hormel)
6 flour burrito tortillas (about 12-inches)
2 c shredded lettuce
3 c shredded Mexican blend cheese
½ teaspoon pepper
4.5 ounces diced green chili peppers
Any additional desired toppings
Chopped green onions (for garnish)
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place a skillet on the stove and turn the heat to medium-high.
Add the ground beef, then cook for a few minutes until crumbly and brown. Add the onions and sauté until soft.
Add the garlic, salt, pepper, and cumin. Sauté until aromatic.
Add the refried beans and green chilis, then stir until well-mixed.
Place another saucepan on the stove and turn the heat to medium.
Add the enchilada sauce, no-bean chili, and tomato sauce. Stir until well blended. Simmer the mixture for a few minutes.
Remove from the heat.
Put a tortilla on a clean plate, then add ⅙ of the beef mixture in the middle. Add lettuce and cheese on top. Fold the sides towards the middle. Repeat the process with the rest of the ingredients.
Arrange them into two 9×13-inch baking pans. Top with the sauce and the rest of the cheese.
Bake for about 20 minutes or until done.
Serve right away with your favorite toppings. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them in the fridge. Reheat in the microwave for a few minutes before serving again.
