Ingredients:
1 tbsp chopped mint
1 tbsp chopped basil
Kosher salt and fresh ground black pepper to taste
Olive oil to taste
3 oz. feta cheese, cut into cubes
1 lime, juiced
1 mini watermelon (approximately 4 c), rind removed and cubed
2 Persian cucumbers (approximately 1 c), sliced
Directions:
Add cucumber, basil, mint, and watermelon into a large serving bowl.
Drizzle lime juice and olive oil on top of the salad.
Sprinkle ground black pepper and salt on top to season. Stir everything until well blended.
