Ingredients:
1-pound red potatoes, washed and very thinly sliced
2 tbsp olive oil
12 sprigs thyme, strip the leaves from the stems (optional)
2 ½ tbsp butter
sea salt and cracked black pepper
1 large onion, sliced somewhat thickly (a tad more than ¼ inch thick)
2 c of Cheese: you can use whatever you like, I used:
1 c grated mozzarella
½ c crumbled feta
½ c grated gruyere
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place a 9-inch cast-iron skillet on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the onion and thyme, then sauté for about 5 minutes or until soft.
In a large mixing bowl, add the cheeses, potato, salt, pepper, and oil. Toss until well mixed.
Add the potato mixture over the onion in the skillet and spread it evenly.
Place the skillet inside the preheated oven and bake for about 45 minutes or until the top turns golden brown.
Remove from the oven, then invert it onto a clean serving plate.
Allow the Upside-Down Potato, Onion to rest for a few minutes at room temperature.
