This is a creamy, delicious chicken pot pie casserole filled with tender chicken, crisp veggies, and creamy sauce, and topped with buttery biscuits. The ultimate comfort food is perfect for busy weeknights and your entire family!
Ingredients
4 c. cooked chicken
4 tbsp butter, divided
1 can of Grands biscuits, 8 biscuits
2 c. milk
2 (10.5-oz.) cans cream of chicken soup
4 c. frozen vegetable mix (corn, peas, carrots, green beans)
½ tsp garlic powder
1 tsp salt
½ tsp black pepper
How to make Chicken Pot Pie Casserole
Step 1: Using a nonstick spray, grease a 9 x 13-inch pan.
Step 2: Prepare the oven. Preheat it to 375 degrees F.
Step 3: On a baking sheet, place the biscuits and bake in the preheated oven for about 8 minutes. Take them out of the oven when done, but leave the oven on.
Step 4: In the meantime, melt 2 tbsp butter in a large skillet over medium-high heat.
Step 5: Into the skillet with the melted butter, add the frozen vegetables, and cook for about 10 to 15 minutes. Next, add the chicken and pour in the milk and chicken soup. To taste, season with salt and pepper. Stir well and continue to cook for additional 5 minutes or until the mixture is completely heated and bubbly hot.
Step 6: Into the prepared baking dish, pour the mixture and evenly spread.
Step 7: Remove the pre-baked biscuits and lay them over the casserole, baked-side down and raw-side up.
Step 8: In a small covered microwaveable dish, place 2 tbsp melted butter and garlic powder. Place in the microwave and heat in 30 increments until melted. Over the biscuits, pour the melted butter.
Step 9: Place in the preheated oven and bake the casserole for about 10 to 12 minutes. Cover the casserole with foil and continue baking for another 10 to 12 minutes or until the biscuits are golden brown.
Notes:
To make this recipe quicker and easier, use rotisserie chicken.
For this recipe, you can use frozen vegetable mixes like corn, peas, carrots, and green beans. But feel free to use your preferred mix of veggies. You can even add fresh veggies such as celery or mushrooms.
You can skip the garlic and use rosemary, thyme, or Italian seasoning for your butter topping. If desired, you can just bake the biscuits plain.
