Ingredients:
2 c milk chocolate chips
20 caramels, unwrapped
1 ½ c flour
1 tablespoon milk
1 teaspoon vanilla extract
½ c butter
1 teaspoon baking powder
1 Egg white
½ c granulated sugar
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
In a mixing bowl, add sugar and butter. Beat until well blended.
Add vanilla and egg, then beat again until well incorporated.
Add baking powder and flour, then whisk until well incorporated.
Sprinkle flour onto a flat surface, then place the dough on it. Use a rolling pin to roll the dough out to about ½ inch thick.
Cut the dough into small circles and place them into a baking pan.
Place the pan in the preheated oven and bake the dough for about 6 to 8 minutes or until done.
Remove from the oven and allow the cookies to cool at room temperature.
Add milk and caramel into a heat-proof bowl, then place it in the microwave. Heat for about a minute or until melted. Stir until well blended.
Top each cooking with a few tsp of the caramel mixture and spread it evenly.
Chill the cookies in the fridge for about 10 to 15 minutes or until done.
Melt the chocolate chips in the microwave, and stir until smooth.
Top each cookie with the melted chocolate and spread it evenly.
Let the cookies rest for a few minutes in the fridge for a few more minutes.
