Ingredients:
8 garlic cloves
1 c white wine
1 c chicken stock
fresh rosemary
1 x 1.8-2 kg free range/organic chicken
2 onions, quartered
for the rub
4-5 tbsp olive oil
salt & pepper to taste
2 sprigs of fresh rosemary
2 garlic cloves
zest and juice of 1 lemon, reserve lemon
Directions:
Prepare the oven and preheat to 400 degrees F or 200 degrees C.
Chop the rosemary and garlic, finely. Put them into a mixing bowl together with olive oil, lemon zest, salt, pepper, and lemon juice. Stir everything until well blended.
Coat the entire chicken with the prepared rub mixture. Make sure to coat it well.
Stuff the cavity of the whole chicken with the reserved lemon.
Put the chicken into an oven-safe baking dish.
Top the chicken with more rosemary, onions, and garlic cloves.
Add chicken stock and wine over the chicken.
Reduce the heat of the oven to about 160 degrees C.
Place the chicken in the preheated oven and bake for about 45 minutes or until done.
Remove from the oven and let it rest for at least 15 minutes at room temperature to incorporate all the flavors.
