Ingredients:
4 tbsp olive oil
2 cloves garlic, minced
1 Egg, beaten
2 tsp dried basil
1 tsp dried oregano
2 tbsp tomato paste
1 pound ground turkey
1 small onion, diced
1 ½ c Pecorino Romano cheese
3-4 small eggplants
Kosher salt and fresh ground pepper, to taste
1 medium tomato, chopped
1-2 tsp red chili flake (optional)
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Slice the eggplants into two from end to end, then remove the flesh inside leaving only a bit of it and the skin.
Chop the flesh of the eggplant finely.
Add the eggplant slices into a baking dish and arrange them in a single layer.
Place a large pan on the stove and turn the heat to medium.
Add 2 tbsp of olive oil and allow it to become hot.
Add the chopped eggplant, onions, and tomato. Sauté for about 6 minutes or until soft.
Add tomato paste and garlic, then sauté for about 2 minutes or until aromatic. Transfer everything into a large mixing bowl.
In the same empty skillet, add olive oil and allow it to become hot.
Add the ground turkey into the hot skillet, then cook for a few minutes until crumbly and brown. Sprinkle chili flakes, salt, pepper, oregano, and basil to taste. Remove from the heat and allow it to cool.
Transfer the browned turkey into the bowl with the sauteed veggies. Add ½ cup of cheese, beaten egg, salt, and pepper. Stir everything until well blended.
Stuff the eggplant slices with the meat mixture.
Sprinkle the rest of the cheese over each stuffed eggplant.
Place them inside the preheated oven and bake for about 50 minutes or until the cheese has melted completely.
Remove from the oven and allow them to rest for a few minutes at room temperature.
