This French-Canadian Meat Pie popularly known as Tourtière is made with ground meat, onions, spices, and herbs baked in a traditional pie crust. A wonderful, savory pie that you can easily make at home at any time!
Ingredients
Pie Pastry:
⅔ c. butter or lard chilled
2 c. unbleached all-purpose flour
6-7 tbsp ice-cold water
½ tsp kosher salt
Meat Filling:
1 tbsp extra virgin olive oil
1 lb ground pork
1 lb ground beef
2 large Russet or Yukon Gold potatoes about 1 lb.
1 small onion, finely chopped
1 clove garlic, finely minced
½ tsp Bells poultry seasoning or your favorite poultry seasoning
¼ tsp ground cloves
½ tsp ground cinnamon
¼ tsp ground nutmeg
1 large egg scrambled for glazing
¼ tsp kosher salt
⅛ tsp pepper
How to make Tourtière: A French-Canadian Meat Pie
Pastry:
Step 1: In a large bowl, mix the flour and salt. Then, cut in the butter and lard until you have a rough crumbly mixture.
Step 2: Next, add the ice water about 1 tbsp at a time, mixing until just the dough comes together.
Step 3: Into a ball, form the dough. Flatten it, wrap it, and place it in the fridge to chill.
Filling:
Step 4: After peeling the potatoes, cut them into 2-inch pieces. In a medium saucepan, add the potatoes. Fill the pan with water enough to cover the potatoes by 2 inches.
Step 5: Bring the water to a boil over high heat. Once boiling, adjust the heat to medium-high and cook the potatoes for about 12 minutes until tender.
Step 6: Set aside a half cup of the potato water and drain the rest. Then, mash the potatoes and set aside.
Step 7: In a hot large skillet over medium heat, add the olive oil along with the onions and garlic. Cook for about 3 minutes, stirring often, until tender. Next, add ground beef and pork. Continue to cook until the meat is pink. When done, drain the excess grease off.
Step 8: Into the skillet with the meat mixture, add the poultry seasoning, cinnamon, cloves, nutmeg, salt, pepper, and reserved potato water. Stir well and let the mixture simmer for about 10 minutes or until the liquid has been absorbed.
Step 9: Take the skillet off the heat and mix in the mashed potatoes. Set aside to cool for a bit.
To Assemble the Pie:
Step 10: Prepare the oven. Preheat it to 400 degrees F or 205 degrees C.
Step 11: Divide the dough in half on a lightly floured surface and flatten one ball of dough using your hands. To fit a 9-inch pie pan, roll the dough to about 12 inches in diameter.
Step 12: Into the pie plate, place the pastry. Add the meat filling. With the beaten egg, brush the outer edge of the pastry.
Step 13: Next, roll the pastry out and place it over the filling. Under the bottom crust, fold the top crust and pinch or flute the edges. Lastly, brush with the egg wash and make slits on top.
Meat Pie:
Step 14: Place in the preheated oven and bake for about 30 to 35 minutes or until the pastry is golden brown.
Step 15: Take the pie out of the oven when done and allow it to cool for about 10 minutes.
Step 16: Slice and serve. Enjoy!
