Ingredients
2 tablespoons Butter
400 grams Potatoes, Peeled and sliced lengthways thinly
400 grams Pumpkin Thinly sliced
½ c. Parmesan Cheese, grated
1 Can Crushed Tomatoes
1 Grated Zucchini
1 Carrot, Grated
1 teaspoon Mixed Herbs
1 teaspoon Salt And Pepper To Taste
How to make Top 1 Super Easy Vegetable Bake
Step 1: Prepare the oven. Preheat it to 180 degrees. Ready a 1.5 liters rectangular baking tray. Lightly grease and set aside.
Step 2: In the microwave, melt the butter. Once melted, add the herbs.
Step 3: In a bowl, place all the vegetables. Over the veggies, pour the butter mixture and mix well to make sure the veggies are completely coated.
Step 4: In the baking tray, layer the vegetables. On top, pour the canned tomatoes and season well.
Step 5: Using foil, tent the dish and place it in the preheated oven. Bake for about 45 minutes. Uncover and add the cheese. Return to the oven and continue baking for another 15 minutes or until golden and the veggies are cooked through.
Step 6: Remove from the oven when done and serve the vegetable bake right away. Enjoy!
