Ingredients:
4 Roma tomatoes chopped
½ pound chicken boneless and skinless (preferably, boneless skinless thighs), chopped
8 ounces spinach fresh
2 tbsp olive oil drained from sun-dried tomatoes
¼ c sun-dried tomatoes chopped, drained of oil
¼ tsp salt
3 garlic cloves chopped
3 tbsp olive oil (use high-quality olive oil or oil from the sun-dried tomatoes jar)
8 ounces spaghetti pasta
¼ c fresh basil leaves chopped
¼ tsp red pepper flakes
Directions:
Place a large skillet on the stove and turn the heat to medium-low.
Add 2 tbsp of olive oil and allow it to become hot.
Add the sundried tomatoes, then cook for a few minutes.
Add the chicken, then cook for a few minutes as well until brown.
Season with salt and red pepper flakes.
Add the fresh spinach, tomatoes, garlic, and basil leaves. Stir and cook for a few minutes until soft and aromatic. Remove the skillet from the stove. Add more seasonings if needed. Make sure to taste first before adding anything.
Refer to the directions provided on the package of the pasta on how to cook it. Drain and rinse with cold water.
Add the al dente pasta into the skillet with the veggies and chicken, then toss until well combined.
Serve and enjoy!
