Ingredients:
FOR THE CRUST:
¼ c extra virgin olive oil
3 tbsp ice water
¼ tsp baking powder
2 tbsp pine nuts, lightly toasted and coarsely chopped
1 ¼ c all-purpose flour
¼ tsp ground black pepper
¼ tsp kosher salt
FOR THE FILLING:
½ c Gruyere cheese, shredded, divided
1 lb. fresh tomatoes, seeded and cut into ¼-inch-thick slices
½ c chopped fresh basil, divided
½ tsp kosher salt
2 cloves garlic, minced
¾ c part-skim ricotta cheese
1 large Egg, lightly beaten
Directions:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Apply cooking spray to a 9-inch pie pan.
Add pine nuts, baking powder, flour, pepper, and salt into the food processor. Pulse until well blended.
In a mixing bowl, add water and olive oil. Stir until well blended. Pour the mixture into the food processor, then pulse again until it forms into a crumbly dough.
Transfer the dough to the greased pan and spread it evenly.
Place the dough inside the preheated oven and bake for about 10 minutes. Remove from the oven.
Meanwhile, add egg, ¼ cup of gruyere cheese, ¼ of the basil, ricotta cheese, salt, and garlic into a mixing bowl. Whisk until well blended.
Pour the mixture on top of the dough and spread it evenly.
Lay the tomato slices, overlapping each other around the ricotta mixture layer.
Sprinkle the rest of the gruyere cheese over.
Place it inside the preheated oven and bake for about 25 minutes or until the cheese has melted completely.
Remove the Tomato, Ricotta Tart from the oven and allow it to rest for at least 10 minutes at room temperature.
Sprinkle the rest of the basil on top to garnish. Slice into even servings.
Serve and enjoy!
Note:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to one week. Reheat in the microwave for a few minutes before serving again.
