Ingredients:
16 ounces mascarpone, at room temp for 15 minutes
6 tablespoons golden rum, divided
1 ½ c espresso, (or strong coffee), room temperature
40 ladyfingers
2 c heavy whipping cream, cold
6 Egg yolks, (large)
2-3 tablespoons unsweetened cocoa powder, to dust the top
¾ c granulated sugar
Directions:
Add 3 tablespoons of rum and 1 ½ cups of espresso into a mixing bowl. Stir until well blended.
Coat ½ of the ladyfingers into the mixture, then arrange them into a 9×13-inch casserole dish.
Add the sugar and yolks into a glass bowl, then whisk until well mixed.
Put the bowl on top of the steam with water, then turn the heat to low. Whisk and simmer for about 10 minutes or until the texture becomes thick.
Remove from the stove, then whisk and allow it to cool.
In a mixing bowl, add 3 tablespoons of rum and 16-ounces of mascarpone. Stir until well blended.
Add the warm yolk and stir until well mixed.
In another mixing bowl, add the heavy cream and beat until it forms stiff peaks.
Add ½ of the cream mixture and stir until well blended.
Add the cream on top of the ladyfingers and spread it evenly.
Add the rest of the ladyfingers on top and spread the rest of the cream over them.
Place them inside the fridge to chill overnight.
Sprinkle cocoa powder on top before serving.
