Ingredients:
½ c Parmigiano-Reggiano, freshly grated
⅔ c heavy cream
⅓ c panko breadcrumbs
Kosher salt and freshly ground black pepper, to taste
1 pound zucchini, thinly sliced
1 ½ tbsp all-purpose flour
Unsalted butter, softened, as needed
1 tsp dried thyme
½ tsp garlic powder
½ c Gruyere cheese, freshly grated
Directions:
Place the rack inside the oven about 6-inches over the broiler. Preheat to high.
Apply cooking spray butter to a 9×13-inch baking dish.
Sprinkle salt and pepper over the zucchini, then arrange them in a single layer on the prepared baking dish.
Place the baking dish inside the preheated oven and bake the zucchinis for about 4 minutes.
Meanwhile, add flour, cream, garlic powder, Parmesan cheese, and thyme into a mixing bowl. Whisk until well blended.
Add the mixture on top of the zucchinis and spread it evenly.
Sprinkle Panko breadcrumbs and Gruyere cheese on top.
Put the baking dish inside the oven and broil for another 5 minutes or until done.
Remove from the oven and allow it to rest for a few minutes at room temperature.
Serve warm and enjoy!
