Ingredients:
For the jackfruit:
2½ c young jackfruit
For the barbecue sauce:
2 garlic cloves, minced
2 tsp olive oil
Dash of liquid smoke
2 c tomato puree
½ tsp garlic powder
⅛ tsp cayenne
½ tsp chili powder
¼ c apple cider vinegar
¼ tsp ground black pepper
2 tbsp molasses
¼ c pure maple syrup
1 tsp sea salt
¼ tsp cumin
1 tsp onion powder
1 tsp paprika
Directions:
Place a saucepan on the stove and turn the heat to medium-low. Add 2 tsp of olive oil and allow it to become hot.
Add garlic and sauté for about a minute or until aromatic.
Add molasses, tomato puree, garlic powder, apple cider vinegar, sea salt, maple syrup, cumin, cayenne pepper, pepper, and onion powder. Stir until well incorporated. Turn the heat up to high and allow it to boil.
Turn the heat down to medium-low, then simmer the mixture for about half an hour.
Drain the jackfruit and rinse it. Lay it onto a chopping board, then remove the core by cutting it. Shred into small pieces and place into a mixing bowl together with the BBQ sauce. Stir until well blended.
Cover the bowl with plastic, then place it in the fridge to marinate for at least an hour.
Place a large skillet on the stove and turn the heat to medium-high. Add 1 tbsp of safflower oil and allow it to become hot.
Add the marinated jackfruit, then cook for half an hour or until done. Make sure to stir from time to time.
Serve right away on buns with your favorite toppings. Enjoy!
