Ingredients:
1 tsp cinnamon
1 ¼ c powdered sugar
2 c milk, lukewarm
½ c unsalted butter, melted & slightly cooled
1 c flour
4 Eggs, separated into yolk & egg whites
Powdered sugar for dusting
3 tsp vanilla extract
1 tbsp water
Directions:
Prepare the oven and preheat to 162 degrees C or 325 degrees F.
Apply cooking spray to an 8×8-inch baking dish. Make sure to coat the sides and bottom.
Add egg whites into a mixing bowl, then beat for a few minutes until they form stiff peaks.
In a separate mixing bowl, add powdered sugar and egg yolks. Beat until well blended.
Add water and butter, then beat again until well incorporated.
Add cinnamon and flour, then beat until well blended.
Add the vanilla extract and milk, then beat again until well mixed.
Transfer the egg whites gradually into the bowl with the yolk mixture, then beat until well mixed.
Transfer the batter to the prepared baking dish and spread it evenly.
Place the baking dish inside the preheated oven and bake the batter for about 40 minutes to 1 hour or until an inserted toothpick comes out clean after inserting it in the middle.
Remove the cake from the oven and allow it to cool for a few minutes at room temperature.

Note:
Cover the top of the cake with foil if it gets too brown while baking.
