Ingredients:
½ gallon milk
1 c white sugar
1 c uncooked long-grain white rice
3 Eggs, lightly beaten
¼ c milk
¼ tsp salt
2 tsp vanilla extract
ground cinnamon to taste
Directions:
Place a large saucepan on the stove and turn the heat to medium-low.
Add the rice, ½ cup gallon milk, and sugar. Stir until just mixed.
Cover the pan and allow the mixture to simmer for about an hour. Make sure to stir from time to time.
Remove the pan from the stove and allow the mixture to sit for at least 10 minutes at room temperature.
Add eggs, ¼ cup milk, vanilla, and salt into a mixing bowl. Stir until well blended.
Pour the mixture into the pan with the rice mixture, then stir everything until well mixed.
Put the pan back to the heat. Stir and cook for about 2 minutes.
Transfer everything into a 9×13-inch baking dish and spread it evenly.
Cover everything with plastic wrap. Fold the corners. Let it rest for a couple of minutes.
Remove the plastic cover, then sprinkle cinnamon on top.
Cover it again, then place it inside the fridge to chill for about 8 hours or overnight.
