Perfect to serve on any occasion, this Canadian Flapper Pie is such a delight! Everything about this pie is perfect. It is so hard to resist, I’m telling you!
Ingredients:
Crust:
¼ tsp ground cinnamon
¼ c (½ stick) unsalted butter, melted
¼ tsp salt
1 ¼ c graham cracker crumbs
½ c sugar
Filling:
3 Egg yolks
2 ½ c whole milk
¼ tsp salt
½ c sugar
1 tsp vanilla extract
¼ c cornstarch
Topping:
¼ c sugar
¼ tsp cream of tartar
3 Egg whites
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Add cinnamon, sugar, salt, melted butter, and graham cracker crumbs into a mixing bowl. Whisk until well blended. Set aside 3 tbsp of the mixture for later use.
Transfer the rest to a 9-inch pie plate and press it to the bottom and sides.
Place the pie plate inside the preheated oven and bake for about 10 minutes or until the top turns golden brown. Remove from the oven and allow it to cool at room temperature.
In a saucepan, add cornstarch and sugar. Stir until well mixed. Place it on the stove and turn the heat to medium.
Add the egg yolks and whole milk, then stir until well blended. Allow the mixture to boil while stirring continuously.
Remove the pan from the stove, then add salt and vanilla extract and stir until well blended. Allow it to cool.
In a mixing bowl, add cream of tartar and egg whites. Beat for about 3 minutes or until it forms soft peaks.
Add sugar and beat until it forms stiff peaks.
Transfer the filling over the cooled crust and spread it evenly.
Add the meringue over and spread it evenly as well.
Place it inside the preheated oven and bake until done.
Remove from the oven and allow it to rest for a few minutes at room temperature.
