Breakfast will always be my favourite meal of the day! It is the time where everything seems so fresh and your outlook in life is just starting to get better. Well, this recipe I am sharing with you today is my favourite breakfast meal ever! I have made this countless times! Give it a try and serve it with your favourite cup of hot coffee! Ingredients:
2 slices bread (I use white, sourdough bread)
½ tablespoon butter, plus more to butter the bread
2 Eggs
⅓ c good quality feta cheese crumbles
chopped parsley or dill to garnish
Directions:
Step 1: Brush both sides of the bread with melted butter.
Step 2: Place a nonstick pan on the stove and turn the heat to medium.
Step 3: Add the bread and cook per side for 2 minutes or until the crust becomes golden.
Step 4: Transfer the bread onto a clean plate.
Step 5: In the same pan, add ½ tablespoon of butter and allow it to melt.
Step 6: Add the eggs and feta cheese. Stir and cook for 4 minutes or until done.
Step 7: Split the cooked eggs between the toasted bread.
Step 8: Garnish with a sprinkle of parsley or freshly chopped dill.
Step 9: Serve warm and enjoy!
Notes:
You can use your preferred kind of bread for this recipe.
