I love how simple yet delicious this Meatloaf is! Oh, man, you have got to give this recipe a try, I’m telling you! I am 100 per cent certain that you and your loved ones are going to love it. Enjoy!
Ingredients:
1 tablespoon vegetable oil
2 eggs lightly beaten
2 c red onion diced
2 pounds ground beef preferably not lean ground beef
4 slices of fresh bread food processed
2 pinches dry parsley
1 pinch ground thyme *see seasoning notes
⅓ c beef broth I used Better Than Bouillon Beef Base
1 ½ tablespoon Worcestershire sauce
4 garlic cloves minced
pepper for taste
salt for taste
Brown Sugar Glaze
2 teaspoons pepper
4 tbsp light brown sugar about 4-5 tbsp
½ c ketchup
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Line the top of the baking sheet with aluminium foil.
Add water into a baking sheet, then put it to the bottom of the oven.
Place a skillet on the stove and turn the heat to medium.
Add vegetable oil and allow it to become hot.
Add the onions and sauté until translucent.
Add garlic and sauté until aromatic.
Remove the sauteed veggies from the skillet onto a clean plate and allow them to cool.
Add the fresh breadcrumbs, Worcestershire sauce, beef broth, and eggs into a mixing bowl. Stir until well mixed.
In another mixing bowl, add ketchup, brown sugar, pepper. Stir until well blended. Set aside.
In a large mixing bowl, add the breadcrumb mixture, ground beef, seasonings, salt, pepper, garlic, and onions. Stir until well combined.
Transfer everything into the prepared baking sheet, then form it into a loaf.
Add ½ of the ketchup mixture on top and spread it evenly.
Place the baking sheet inside the prepared pan with water.
Place it inside the preheated oven and bake for about 45 minutes to 1 hour or until done.
Spread the rest of the ketchup mixture on top.
Allow the meatloaf to rest for a few minutes at room temperature.
Serve with veggies and mashed potatoes. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 to 4 days.
