I love this dish! A big thanks to my Filipino friend, Larry, for this awesome recipe! I would love to visit the Philippines someday to eat their delicacies. For now, let us enjoy this Chicken Adobo! Ingredients:
4 pounds bone-in, skin-on chicken thighs and/or legs
2 tablespoons cooking oil
¾ c soy sauce
½ c cane vinegar or white vinegar
½ c sake or water
1 tablespoon fish sauce
3 tablespoons sugar
⅓ c chopped garlic
zest from 1 lime or lemon
4 bay leaves
½ teaspoon black pepper
chopped green onions and cilantro for garnish, optional
Directions:
Place a Dutch oven on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Add the chicken thighs and sear each side for about 10 minutes or until they turn golden brown.
In a medium mixing bowl, add the vinegar, soy sauce, fish sauce, chopped garlic, bay leaves, lime zest, sugar, sake, and pepper. Stir until well combined. Make sure that the sugar is dissolved completely.
Add the sauce into the pot and stir until the chicken thighs are well coated.
Allow the mixture to boil, then turn the heat down to medium-low.
Let the adobo simmer for about 25 minutes.
At this stage, the sauce will be slightly thick. That’s what we want!
Remove from the heat and discard the bay leaves.
Garnish with your preferred greens.
Serve over rice and enjoy!
