Ingredients:
The Best-Ever Fried Chicken
Vegetable oil, for frying
10 chicken thighs/drumsticks
Slaw, to serve
Hot sauce, to serve
Brine
2 tsp garlic powder
2 tsp onion powder
Zest of 1 lemon
½ c salt
½ c light brown sugar
2 c water
Buttermilk Marinade
2 tsp cayenne pepper
Freshly ground black pepper
2 tsp mustard powder
2 tsp salt
2 c buttermilk
Dredge
1 tsp onion powder
1 tsp garlic powder
1 tsp cayenne pepper
2 tsp salt
1 tsp mustard powder
½ c dried polenta
5 tsp cornstarch
3 c flour
Directions:
In a large bowl, add all the ingredients for the brine. Stir everything until well blended.
Add the chicken into the bowl with the brine solution and make sure to submerge it completely.
Cover the bowl, then place it inside the fridge to rest for 12 hours.
In a large bowl, add all the ingredients for the buttermilk mixture. Stir until well blended.
Remove the chicken from the brine solution, then transfer them into the bowl with the buttermilk mixture. Toss until well coated and let the chicken marinate for 4 to 6 hours.
In a separate mixing bowl, add all the ingredients for the chicken dredge. Whisk until well mixed.
Coat each chicken slice with the flour mixture and shake off any excess.
Move the chicken onto a wire rack, then place them inside the fridge to rest for 30 minutes to 4 hours.
Place a large pot on the stove and turn the heat to medium-high.
Add enough oil and allow it to become hot.
Add the chicken into batches, making sure they are not overcrowded, then cook for about 12 minutes or until done.
Transfer the fried chicken onto a clean plate lined with paper towels to drain any excess oil. Sprinkle salt on top. Repeat the process with the rest of the chicken.
Serve right away with coleslaw and hot sauce. Enjoy!
