This will be the best soup you will ever have; I’m telling you! Oh, man, you need this in your life! The first time I tasted this, I was so blown away by how all the ingredients complement each other. I asked my friend for the recipe and she was gracious enough to give it to me. Ingredients:
1 11 oz can enchilada sauce
1 c water
1 15 oz can corn undrained
shredded cheese for topping
crunchy tortilla strips for topping
1 lb. chicken breasts
1 packet taco seasoning
1 medium onion diced
2 cloves garlic minced
½ tsp chilli powder
1 15 oz can beef or chicken broth
1 15 oz can of diced tomatoes and green chiles undrained
salt and pepper to taste
Directions:
Arrange the chicken breasts into a 5-quart crockpot.
Sprinkle salt and pepper over the chicken breasts.
Add the minced garlic and onion slices over the chicken breasts.
Add water, broth, tomatoes, enchilada sauce, and corn.
Sprinkle the chilli powder and taco seasoning, then stir until well combined.
Cover the pot and cook for 8 to 10 hours on a low setting.
Remove the chicken breasts from the pot, then use two forks to shred them into small pieces.
Put the shredded chicken back into the pot and stir until everything is well combined.
Cook for another 15 minutes.
Top each serving with a crispy tortilla and shredded cheese.
