Ingredients:
2 c potatoes, peeled and cubed
2 carrots, peeled and grated
1 small onion, chopped
1 clove garlic, minced
1 ½ c water
1 tbsp beef bouillon granules (about 4 cubes)
½ tsp salt
1 pound ground beef, browned and drained
2 ½ c milk (divided use)
3 tbsp all-purpose flour
8 oz Velveeta, cubed
½ lb bacon crisply cooked and crumbled
Directions:
Place a skillet on the stove and turn the heat to medium.
Add the ground beef, then cook until crumbly and brown. Remove from the heat and discard any excess fat.
Place a large pan on the stove and turn the heat to medium.
Add the potatoes, carrots, garlic, onion, water, bouillon cube, salt, and pepper. Stir until well mixed and allow the mixture to boil.
Turn the heat down to low and simmer for a couple of minutes until the potatoes are fork-tender.
Add the browned beef and 2 cups of milk. Stir until well mixed.
In a mixing bowl, add ½ cup of milk and flour. Stir until well mixed.
Pour the mixture gradually into the pan. Make sure to stir every addition.
Allow the mixture to boil for about 2 minutes or until the texture of the sauce becomes thick.
Add the cheese and stir until melted completely.
Sprinkle crumbled bacon on top.
