This spectacular Thai Yellow Chicken Curry never fails to make our dining experience awesome! This is a must-try recipe that I am sure you are going to love! Ready in just 40 minutes. Enjoy!
Ingredients:
1.5 lbs. boneless, skinless chicken thighs, cubed into ½-inch pieces
2 cans (13.66 ounces or 403ml each) of coconut milk
2 tbsp peanut butter, or cashew butter for paleo
1 tbsp lime zest or 2 kaffir lime leaves if available
1 tsp ground turmeric
1 tsp sea salt, more or less to taste if you use the fish sauce
4 c chopped baby spinach, 4-6 oz.
Optional: 1 tbsp fish sauce
2 tbsp freshly squeezed lime juice
2 c thinly sliced peeled carrots, about 12 oz.
1 large onion, 12 ounces
2 c cubed potatoes, Yukon golds, 12 oz.
1 tbsp avocado oil, or other oil suitable for high heat
2 tbsp yellow curry paste
Optional Toppings:
roughly chopped peanuts, or cashews for paleo
Chopped fresh cilantro
lime wedges
Directions:
Slice the peeled onions in half, then cut each into ¼-inch pieces. Thinly slice the carrots.
Put a 12-inch skillet on the stove and turn the heat to medium-high.
Add avocado oil and allow it to become hot.
Add the chicken pieces into the hot skillet, then cook for a few minutes until brown. Transfer onto a clean plate.
In the same empty skillet, add the carrots and onions. Sauté for about 6 to 8 minutes.
Add turmeric, curry paste, and potatoes. Stir and cook the curry paste for a minute.
Add lime zest and coconut milk, then stir until well blended. Allow the mixture to boil.
Reduce the heat to medium, then simmer everything for about 10 to 15 minutes or until the vegetables are soft and the sauce is thick.
Put the chicken back into the skillet, then toss until well coated by the delicious sauce.
Add nut butter, fish sauce, and lime juice. Stir until well blended.
Remove the skillet from the heat, then add the chopped spinach and stir until well mixed. Allow the spinach to wilt.
Serve with your favorite toppings over rice or noodles. Enjoy!
