Ingredients:
1 lb. ground beef
½ tsp dry mustard
2 ½ tsp chili powder
2 tbsp olive oil
2 tbsp tomato paste
1 c water
1 c diced onion
¼ tsp freshly ground black pepper
1 c diced green bell pepper
1 14.5 oz. can of diced tomatoes with juice
½ c uncooked long-grain white rice
1 ½ tsp Worcestershire sauce
Grated cheddar or Monterey jack cheese (optional)
2 tsp salt
1 tbsp minced fresh garlic
Directions:
Place a skillet on the stove and turn the heat to medium-high. Add olive oil and allow it to become hot.
Add the ground beef, then cook for a few minutes until crumbly and brown.
Add the garlic, onion, and peppers. Sauté for a few minutes until aromatic and soft. Season with salt, pepper, dry mustard, and chili powder to taste.
Add the tomato paste and rice, then stir and cook for about 3 minutes.
Add water, canned tomatoes, Worcestershire sauce, and tomato juice. Stir until well blended.
Cover the skillet and simmer everything for about 20 minutes.
Remove the cover, then use a fork to fluff the rice. Cook for another 2 minutes if the texture of the rice is still wet.
Serve and enjoy!
Notes:
You can top the dish with grated cheese if you prefer.
