Ingredients:
1 ½ pound ground beef
2 cups shredded Mexican cheese blend, divided
½ cup panko bread crumbs
2 tablespoons freshly chopped parsley, plus more for garnish
2 cloves garlic, minced
1 jalapeño, finely chopped
1 large Egg
1 teaspoon ground cumin
Kosher salt
Freshly ground black pepper
1 tablespoon extra-virgin olive oil
½ large onion, chopped
1 (15-ounces) can crushed tomatoes
2 tablespoons chopped chipotle chiles in adobo sauce
Directions:
Step 1: In a medium mixing bowl, add in ground beef, bread crumbs, 1 cup of cheese, garlic, jalapeno, egg, cumin, parsley, salt, and pepper. Stir until well combined.
Step 2: Form meatballs out of the mixture.
Step 3: Place a large skillet on the stove and turn the heat to medium-high.
Step 4: Add in the oil and allow it to become hot.
Step 5: Add in the meatballs and sear each side for 2 minutes or until done.
Step 6: Place the meatballs on a clean plate.
Step 7: In the same skillet, add in the onion and cook for 5 minutes or until translucent.
Step 8: Add in the crushed tomatoes and chipotle in adobo, then allow the mixture to boil.
Step 9: Turn the heat down to medium-low and put the meatballs back to the skillet.
Step 10: Cover the skillet and allow it to simmer for about 10 minutes.
Step 11: Remove the cover and sprinkle 1 cup of cheese on top.
Step 12: Cover and cook for another 2 minutes or until the cheese is melted completely.
Step 13: Remove the cover and sprinkle parsley on top.
Step 14: Serve and enjoy!
