These are the best enchiladas! Incredibly easy to make, super cheesy, delicious, and best serve with salsa, Charro, or refried beans. For an authentic Tex-Mex platter, enjoy these Beef Enchiladas with Spanish rice.
Ingredients
2 tablespoons cooking oil
2-3 pounds coarse ground chuck
1 medium white onion
1 tablespoon chili powder
2-3 medium jalapeno or Serrano peppers
⅓ bunch fresh cilantro
1 tablespoon smoked paprika
12 plus homemade corn or flour tortillas
2-3 cups enchilada sauce
1 cup grated Monterey jack cheese
1 cup grated Mexican blend cheese
1 teaspoon sea salt
1 teaspoon ground black pepper
How to make Tex-Mex Beef Enchiladas
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: After peeling the onion, slice it into quarters and place it in the food processor. Then, slice the peppers in half, and take the stems off along with the seeds and veins. Add the peppers to the food processor, followed by the cilantro leaves. Pulse until everything is finely minced.
Step 3: In a bowl, combine the Monterey jack and Mexican cheese. Set aside.
Step 4: Add cooking oil to a hot, large, heavy non-stick skillet (or cast iron) over medium-high heat. Add the ground chuck, chili powder, paprika, salt, and pepper. Cook until the meat is gray, stirring often.
Step 5: Into the skillet, add the mixture from the food processor and continue to cook for another 2 minutes.
Step 6: Take the skillet off the heat and set it aside.
Step 7: Ready a 9 x 13-inch baking dish. Lightly grease and set aside.
Step 8: On a paper towel, place 4-6 tortillas at a time. Tent the tortillas with another paper towel. Heat in the microwave for about 20 seconds until soft.
Step 9: On a cutting board or large piece of waxed paper, transfer the tortillas.
Step 10: Down the middle of 1 tortilla, spoon the meat mixture, and sprinkle with a bit of grated cheese. Roll the tortilla and place it in the prepared baking dish, seam-down. Repeat with the rest of the tortillas and meat.
Step 11: Over the entire dish, pour the enchilada sauce and sprinkle with the remaining cheese. If desired, you can add extra cheese.
Step 12: Place in the preheated oven and bake for about 25 to 30 minutes or until the cheese is bubbly and crusty.
Step 13: Remove from the oven when done and serve the enchiladas with salsa, Charro or refried beans, and Spanish rice. Enjoy!
