I love Mexican food! One bite of this beef enchiladas and I know. I fell hard and crave this always! Not too boring Taco Tuesday with this Tex-Mex Beef Enchiladas!
Ingredients:
2-3 pounds coarse ground chuck
2 tablespoon cooking oil
1 medium white onion
2-3 medium jalapeno or Serrano peppers
⅓ bunch fresh cilantro
1 tablespoon chilli powder
1 tablespoon smoked paprika
1 teaspoon of sea salt
1 teaspoon ground black pepper
12+ homemade corn or flour tortillas (can use store-bought)
1 cup grated Monterey jack cheese
1 cup grated Mexican blend cheese
2-3 cups enchilada sauce RED HOT ENCHILADA SAUCE (you can use store-bought enchilada sauce)
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Peel and slice the onion into 4, then place it in a food processor.
Step 3: Slice the peppers into two and remove the seeds, veins, and stems. Place it into the food processor.
Step 4: Remove the stems of the cilantro and place the leaves into the food processor.
Step 5: Pulse until all the ingredients are well mixed and minced.
Step 6: In a medium mixing bowl, add the Monterey jack cheese and Mexican blend cheese. Toss until well combined.
Step 7: Place a large skillet on the stove and turn the heat to medium-high.
Step 8: Add in the oil, ground chuck, paprika, salt, pepper, and chilli powder. Cook and stir until the meat is done.
Step 9: Add in the minced peppers, onions, and cilantro. Cook for another 2 minutes or until aromatic.
Step 10: Remove the skillet from the heat.
Step 11: Apply cooking spray in a 9×13-inch baking dish.
Step 12: Microwave 4 to 6 tortillas for 20 seconds. Make sure to cover them with paper towels. Repeat this method 2 to 3 times.
Step 13: Spoon the mixture in the middle of each tortilla and sprinkle cheese on top. Roll and place the stuffed tortillas into the baking dish with seams down.
Step 14: Pour the enchilada sauce all over the dish.
Step 15: Sprinkle the rest of the cheese on top.
Step 16: Place it inside the preheated oven and bake for 25 to 30 minutes or until the cheese is brown and bubbly.
Step 17: Remove from the oven and serve right away. Enjoy!
Note:
Serve this dish with refried beans, salsa, charro, and Spanish rice.
