This Teriyaki Beef Stir Fry is my ultimate comfort food! Serve this over rice, and you have yourself a meal to remember! Have a wonderful day, friends. Enjoy!
Ingredients:
For the Stir Fry:
1 tbsp extra-virgin olive oil divided
3 c chopped mixed vegetables of choice such as broccoli, snap peas, or carrots
1 tbsp low-sodium soy sauce
3 medium green onions finely chopped; divided
1 lb. sirloin steak cut into thin, bite-sized pieces
1 8 oz. can sliced water chestnuts drained
1 red bell pepper cored and cut into thin slices
½ tsp ground black pepper
Prepared brown rice quinoa, noodles, or cauliflower rice — for serving
1 tbsp sesame seeds optional
For the Teriyaki Sauce:
1 tbsp minced ginger
1 tbsp minced garlic
3 tbsp pure maple syrup
⅓ c low-sodium soy sauce
¼ c water
1 tbsp rice vinegar
1 tbsp cornstarch
¼ tsp red pepper flakes plus additional to taste
Directions:
In a mixing bowl, add the beef, black pepper, and 1 tsp soy sauce. Stir until the beef pieces are well coated. Let them sit to marinate.
Add water, maple syrup, soy sauce, cornstarch, garlic, red pepper flakes, rice vinegar, and ginger into a mixing bowl. Stir until well mixed.
Place a large pan on the stove and turn the heat to medium-high.
Add ½ tbsp of oil and allow it to become hot.
Add the beef pieces and cook each side until brown. Remove from the pan and transfer them onto a clean plate.
In the empty pan, add the rest of the oil and allow it to become hot.
Add the veggies, then sauté for a few minutes until soft.
Put the beef pieces back into the pan as well as chestnuts and water. Stir until well combined, then simmer everything for about 3 minutes or until the texture of the sauce becomes thick.
Add ½ of the green onions, then stir until well mixed.
Garnish with the rest of the green onions and sesame seeds.
Serve and enjoy!
Note:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 days.
