Ingredients:
1 ¼ c frozen blueberries
2 Eggs
1 ⅔ c all-purpose flour
¼ c sour cream
2 tsp baking powder
⅓ c milk
1 tbsp confectioners’ sugar
¾ c white sugar
¼ c melted butter
¼ tsp salt
1 lemon
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray in a 9×5-inch loaf pan.
Grate the lemon zest, then put it on a plate.
Slice the lemon into two, then squeeze each into a small cup.
In a small mixing bowl, add confectioners’ sugar, 1 tbsp of lemon juice, and 1 tsp of lemon zest. Stir until well blended.
In a large mixing bowl, add melted butter, sour cream, eggs, white sugar, and the rest of the lemon juice. Whisk until well mixed.
Transfer the zest mixture into the bowl with the egg mixture, then stir until well mixed.
Add milk and stir until well blended.
In another mixing bowl, add baking powder, salt, and flour. Whisk until well mixed. Set aside 3 tbsp of the mixture for later use.
Create a hole in the middle of the flour mixture, then add the egg mixture and stir until well mixed.
Coat each blueberry with the reserved flour mixture.
Add the coated blueberries into the batter and stir until well mixed.
Transfer the batter into the greased pan and spread it evenly.
Place it inside the preheated oven and bake for about an hour or until a toothpick comes out clean after inserting it in the middle.
Remove the oven and use a fork or toothpick to poke small holes over the loaf.
Allow it to cool completely at room temperature.
