Ingredients:
2 tbsp extra virgin olive oil
2 cloves fresh garlic (minced)
¼ c olive oil
1 Pork Tenderloin (1.5 – 3 lbs)
½ c Marsala wine
1 c chicken broth
3 cloves garlic (minced)
3 tbsp heavy cream
1 tbsp all-purpose flour
2 medium shallots (finely diced)
2 tbsp herbes de provence
12 oz mushrooms (thinly sliced)
¼ c chopped fresh flat-leaf parsley
Kosher salt and freshly ground black pepper
3 tbsp unsalted butter (divided)
Directions:
In a resealable bag, add the Herbes de Provence, olive oil, garlic, and the pork tenderloin. Shake the bag until everything is well combined.
Leave it to marinate for an hour or overnight. (I prefer overnight)
Slice the tenderloin into small cuts.
Sprinkle salt and pepper on each side, then rub until well coated.
Place a saucepan on the stove and turn the heat to medium.
Add olive oil and 1 tbsp of butter, then allow them to become hot.
Add the sliced tenderloins and sear each side for a few minutes.
Transfer the tenderloin onto a clean plate. Cover them with foil.
In the same pan, add the rest of the butter and allow it to melt.
Add the shallots and sauté until just caramelized.
Add the garlic and sauté until aromatic. Make sure to scrape the bottom to get the brown bits. They taste delicious!
Add the mushrooms and sauté until soft.
Add flour and stir until well mixed.
Add the Marsala wine and stir until just blended.
Allow the alcohol to evaporate, then add the chicken broth. Stir and cook for another 3 minutes.
Turn the heat down to low, then add the heavy cream and parsley. Stir until well blended.
Put the tenderloins back in the pan and cook each side for another 2 minutes.
Season with salt and pepper if necessary.
Serve hot over mashed potatoes, rice, or pasta. Enjoy!
