Ingredients:
1 (32 oz.) package tater tots
1 lb. bacon
2 (9 oz.) packages breakfast sausage links
12 large Eggs
½ c milk
2 c cheddar cheese, shredded and divided
¼ c green onions thinly sliced
1 c Monterey jack cheese, shredded
2 tbsp green onions, thinly sliced
½ tsp salt
¼ tsp black pepper
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray in a 9×13-inch baking dish.
Place a skillet on the stove and turn the heat to medium.
Add the sausage and cook until brown. Remove from the skillet onto a clean plate lined with paper towels to drain any excess oil.
Slice the sausage into thin pieces.
Add the bacon into the same skillet, then cook until crispy and brown. Remove from the skillet onto another clean plate lined with paper towels to drain any excess grease. Crumble into small pieces.
Lay the tater tots to the bottom of the prepared baking dish and spread them evenly.
In a mixing bowl, add milk, eggs, ¼ cup green onions, salt, and pepper. Beat until well mixed.
Add ½ of the crumbled bacon and the sausage slices. Stir until well mixed.
Add 1 cup of cheddar cheese and 1 cup of Monterey Jack cheese. Stir until well mixed.
Pour the mixture on top of the tater tots and spread it evenly.
Place it inside the preheated oven and bake for about 45 minutes.
Sprinkle the rest of the cheddar cheese on top and bake for another 5 minutes or until the cheese is melted completely.
Remove from the oven and let it rest for at least 10 minutes at room temperature.
Sprinkle the rest of the crumbled bacon on top.
Garnish with green onions.
