What a dish! This Salmon Pasta with Spinach is simply the best! This is a 30-minute recipe that you can prepare on busy days. Very convenient for people like me and you! Everything about this dish is perfect. From the pasta to the rich sauce, it is to die for. Enjoy!
Ingredients:
1 c heavy cream
8 ounces uncooked pasta I use campanelle
2 tablespoons parsley, chopped
salt and pepper to taste
2 garlic cloves, minced
1 c Parmesan cheese, grated
1 medium onion, chopped
3 tablespoons butter
6 ounces of baby spinach
1 pound salmon skinless and boneless – one piece or multiple pieces
Directions:
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and a bit of salt, then cook for a few minutes until al dente. Drain and rinse with cold water to stop the cooking process. Put it back into the pot and set it aside.
Place a pan on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the onion and sauté for about 4 minutes or until translucent.
Add the salmon and cook for about 5 minutes or until flaky.
Add spinach, then cook for about 2 minutes or until wilted.
Add salt, pepper, heavy cream, Parmesan cheese, and garlic. Stir until well combined. Bring the mixture to a boil.
Add the cooked pasta into the pan, then toss until well coated with the delicious sauce. Remove the pan from the heat.
Sprinkle Parmesan cheese and freshly chopped parsley over each serving to garnish.
Serve right away and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge.
