Ingredients:
4 chicken breasts (bones left in, with skin, about 3¼ lbs.)
8 small red potatoes, quartered
4 cloves garlic, minced
6 tbsp olive oil
¾ lb. trimmed green beans
2 lemons, 1 thinly sliced, 1 juiced
1 tsp kosher salt
½ tsp freshly ground black pepper
Directions:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Brush a large baking dish with 1 tbsp of olive oil.
Lay the lemon slices into the prepared baking dish and arrange them in a single layer.
In a separate mixing bowl, add garlic, salt, pepper, lemon juice, and the rest of the oil. Stir everything until well blended.
Add the green beans into the bowl with the oil mixture, then toss until well coated.
Transfer the green beans into the prepared baking dish over the lemon slices.
In the same bowl with the oil mixture, add the potatoes and toss until well coated.
Transfer the coated potatoes around the baking dish over the green beans.
Add the chicken into the same bowl with the oil mixture, then toss until well coated. Lay the chicken over the green beans.
Drizzle the oil mixture on top of the ingredients in the baking dish.
Place the baking dish in the preheated oven and roast for about 50 minutes. Transfer the chicken onto a clean plate.
Roast the potatoes and veggies for 10 more minutes.
Transfer each chicken onto individual serving plates.
