Ingredients:
6 slices crispy cooked bacon, coarsely chopped
Salt and Pepper to taste
1 tsp garlic powder
2 pounds of cauliflower florets, cut into bite-size pieces
1 ½ c sharp cheddar finely shredded
¼ c chopped fresh chives (reserve one tablespoon for the top)
1 ½ c Monterey Jack cheese, finely shredded
½ c sour cream
1 box (8 oz) cream cheese softened
½ tsp onion powder
Directions:
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add cauliflower to the hot water, then steam for 10 minutes or until tender.
Move the cauliflower into a colander, then drain.
Prepare the oven and preheat to 425 degrees F.
Apply cooking spray to a 9×13-inch baking dish.
Add cream cheese, Monterey Jack cheese, onion powder, sour cream, cheddar cheese, and garlic powder into a large mixing bowl. Stir everything until well blended.
Add half of the bacon, steamed cauliflower, chives, salt, and pepper into the bowl with the cheese mixture. Stir.
Transfer the mixture to the prepared casserole dish and spread it evenly.
Scatter the rest of the bacon pieces on top.
Place it inside the preheated oven and bake for about 20 to 25 minutes or until the cheese turns golden brown.
Remove from the oven.
Sprinkle the rest of the chives on top to garnish.
