The sauce alone of this Creamy Garlic Mushrooms and Bacon dish is more than enough to let you know that you are in for a treat! In less than an hour, this is ready for serving! It is keto friendly as well. How awesome is that? Enjoy!
Ingredients:
2 tbsp butter
1 tbsp olive oil
8 oz. (250 g) bacon, cut into strips
¼ c dry white wine (or chicken broth/stock)
1 tbsp fresh chopped parsley
26 oz. (750 g) brown mushrooms, washed (pat dry with paper towels)
1 tsp fresh chopped thyme
Salt and pepper to season
½ c fresh shredded or grated mozzarella
¼ c fresh shredded or grated Parmesan cheese
6 cloves garlic, finely chopped
1 ½ c (400 ml) heavy cream, (thickened cream or evaporated milk)
Directions:
Place a large oven-proof skillet on the stove and turn the heat to medium.
Add bacon, then cook for a few minutes until crispy and brown.
Transfer the crispy bacon onto a clean plate lined with paper towels to drain any accumulated grease.
Add butter and a bit of oil into the same skillet.
Add the mushrooms, then cook for a few minutes until brown.
Add wine and scrape the bottom of the skillet to get the browned bits.
Let the mixture simmer for a few minutes until reduced to almost half.
Add garlic, then stir and cook for about a minute or until aromatic.
Add the herbs and cream, then stir until well blended. Simmer the mixture for a few more minutes. Season with salt and pepper to taste.
Bring the crispy bacon back into the skillet and stir everything until well incorporated.
Sprinkle Parmesan cheese and mozzarella cheese on top of the dish.
Place the skillet in the oven and broil for a few minutes until the cheese turns golden brown.
Remove the skillet from the oven and let it cool for a few minutes.
