Chicken smothered in a rich and creamy mushroom gravy! You will surely love this amazing dish! Serve it over mashed potatoes, and you have yourself a meal to remember. Enjoy!
Ingredients:
CHICKEN:
1 tablespoon / 15 grams butter
2 teaspoons olive oil
Salt and pepper
600 g / 1.2-pound chicken breasts, boneless, skinless, 4 small ones
MUSHROOM GRAVY:
1 garlic clove, finely chopped (or minced)
2 c / 500 ml beef broth
¼ c / 35 grams flour (3 tablespoons)
120 g / 4 ounces mushrooms, sliced
2 tablespoons / 30 grams butter, separated
GARNISH (OPTIONAL):
Thyme or parsley
Directions:
For the Chicken:
Wrap each chicken breast with plastic, then gently pound each to ⅘-inch thick with a meat mallet.
Season each side of every chicken breast with a generous amount of salt and pepper.
Place a large skillet on the stove and turn the heat to medium.
Add oil and butter. Wait until hot and swirl around the skillet.
Add the chicken breasts into the hot skillet, then cook each side for about 3 minutes or until they turn golden brown.
Transfer the chicken breasts onto a clean plate. Cover with foil to keep them warm.
For the Gravy:
In the same empty skillet, add 1 tbsp of butter and allow it to melt.
Add the mushrooms, then sauté for a few minutes until golden brown.
Add the rest of the butter and allow it to melt.
Add the garlic and sauté for a minute or until aromatic.
Reduce the heat to medium, then add flour, then stir and cook for about a minute to remove the raw taste.
Add the broth and whisk continuously until well blended.
Simmer the gravy for 2 minutes or until the texture of the sauce becomes thick. Season with salt and pepper to taste. Remove from the heat.
Top each chicken with delicious gravy.
Serve with mashed potatoes. Enjoy!
