Ready in just an hour, this Chicken Rice Casserole is one to try! All you need are these simple ingredients, and you are good to go! Serve it with steamed veggies, salad, or Cole slaw, and you have yourself a meal to remember. Enjoy!
Ingredients:
1 teaspoon Favorite Chicken Seasoning
1 Onion, medium
2 c Chicken broth
3 tablespoons Olive oil
2 Carrots, medium
¼ teaspoon turmeric, optional (for color)
1 c Basmati rice
1 teaspoon Salt and pepper, to taste
1-pound boneless, skinless chicken thighs
Directions:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Place a large skillet on the stove and turn the heat to medium-high.
Add olive oil and allow it to become hot.
Add the onion into the hot skillet and sauté for about 3 minutes or until translucent.
Add the carrots and sauté for 3 more minutes or until soft.
Add the chicken, then season with salt and pepper. Cook for about 5 minutes or until it turns golden brown.
Remove the chicken from the skillet and transfer it into a casserole dish.
Add the chicken broth and rice into the casserole dish with the chicken, then stir everything until well combined.
Cover the casserole dish with aluminium foil.
Place the casserole dish inside the preheated oven and bake for about 40 minutes or until done.
Remove from the oven and allow it to rest for a few minutes at room temperature.
Serve warm and enjoy!
Note:
For a yellowish color, stir in ¼ tsp of turmeric.
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 4 days.
You can serve this with steamed veggies, Cole slaw, or salad.
