Zucchini, breadcrumbs, cheese, and a lot more in this Cheesy Scalloped Zucchini dish! You are so in for a treat! In just 15 minutes, this delicious food is ready to be devoured! Broiled to perfection is what I like to call it! This recipe can yield up to 4 servings. If you are having more guests, then you should double this recipe. You don’t need to worry about leftovers because trust me, there won’t be any! That’s how delicious this is. It is so irresistible. Enjoy!
Ingredients:
1 ½ tbsp all-purpose flour
½ c Parmigiano-Reggiano, freshly grated
½ c Gruyere cheese, freshly grated
Unsalted butter, softened, as needed
⅓ c panko breadcrumbs
1 tsp dried thyme
1 pound zucchini, thinly sliced
Kosher salt and freshly ground black pepper, to taste
½ tsp garlic powder
⅔ c heavy cream
Directions:
Place the rack about 6-inches from the broiler.
Preheat the oven to high.
Apply softened butter to a 9×13-inch baking dish.
Sprinkle salt and pepper over the zucchini slices, then toss until well coated.
Add the zucchini slices into the prepared baking dish and arrange them in a single layer.
Place them inside preheated broiler to cook for 4 minutes.
Meanwhile, add Parmesan cheese, flour, cream, garlic powder, and thyme into a mixing bowl. Stir until well blended.
Transfer the mixture into the baking dish over the zucchini slices and spread it evenly.
Scatter panko breadcrumbs and Gruyere cheese over the zucchini slices.
Put them back in the oven and broil for another 4 to 5 minutes or until the top turns golden brown.
Remove from the oven and allow the Cheesy Scalloped Zucchini to rest for a few minutes at room temperature.
