Crunchy, crispy, sweet, and spicy! These are the things that make this Cheesecake Factory’s Spicy Cashew Chicken great! Ready in less than an hour, you will not regret ever trying this awesome recipe!
Ingredients:
Rice Flour Batter
8 oz. Cashews
Seasoned Rice Flour
Spicy Soy-Sherry Sauce
1 ½ lbs. chicken breast, cut into bite-size chunks
6 green onions, cut into ¼-inch pieces
⅓ c canola or vegetable oil
SEASONED RICE FLOUR:
¼ tsp Kosher Salt
⅛ tsp Ground Black Pepper
¾ c Rice Flour
⅛ tsp Paprika
⅛ tsp Baking Powder
RICE FLOUR BATTER:
¼ tsp Kosher Salt
¼ c All-Purpose Flour
1 ½ c Ice Water
¼ tsp Ground Black Pepper
1 ½ c Rice Flour
SPICY SOY-SHERRY SAUCE:
2 oz. fresh garlic, minced
¼ c soy sauce
¼ c granulated sugar
1 tbsp Sriracha sauce
¼ tsp Crushed Red Chili Flakes
1 c Hoisin sauce
¼ c Sherry Wine
2 tbsp red wine vinegar
Directions:
Seasoned Rice Flour:
In a mixing bowl, add all the ingredients for the seasoned rice flour. Whisk until well incorporated.
Batter:
In a separate bowl, add all the ingredients for the batter. Whisk until well blended.
Sauce:
In another bowl, add all the ingredients for the sauce. Stir until well blended.
Dish:
Add the chicken pieces into the bowl with the seasoned flour. Toss until well coated. Shake off any excess.
Move the coated chicken pieces into a large bowl, then pour the batter on top. Toss once more until well coated.
Place a large pan on the stove and turn the heat to medium-high.
Add canola oil and allow it to become hot.
Add the coated chicken into the hot pan, then cook each side for about 3 minutes or until golden brown.
Add the sauce, cashews, and green onions. Stir until well mixed. Cook for 1 minute and remove the pan from the heat.
Sprinkle freshly chopped parsley, crushed cashews, and sesame seeds on top to garnish.
Serve right away. Enjoy!
