Ingredients:
2 medium carrots (shredded)
1 tablespoon paprika
1 c chicken stock
1 medium cabbage
1 ½ pound boneless chicken thighs, cut into small pieces
2 tablespoons tomato paste
chopped fresh parsley to garnish
1 tablespoon hot sauce
salt, pepper
3 tablespoons olive oil
Directions:
Put a large pan on the stove and turn the heat to medium-high.
Add olive oil and allow it to become hot.
Add the chicken and cook each side for 5 minutes or until they turn brown.
Thinly slice the cabbage-like coleslaw.
In the same skillet, add tomato paste and paprika. Stir and cook for a minute.
Add the cabbage slices, then sauté for about 5 minutes or until soft.
Add chicken stock, shredded carrots, pepper, and salt. Stir until well blended. Cook everything for 40 minutes.
Add 1 tbsp of hot sauce and stir until well blended.
Garnish with freshly chopped parsley.
Serve and enjoy!
Note:
Place any leftovers in an airtight container, then place them inside the fridge. They can last for 3 days. I don’t recommend freezing.
