If you are a huge fan of Quesadillas, then you need to give this recipe a try! This was by far the best Quesadilla recipe I have ever tried! The ingredients are very simple yet very delicious when combined. Enjoy!
Ingredients:
8 oz. cheddar cheese, grated or sliced thin
salt and freshly ground black pepper, to taste
8 large flour tortillas
6 slices bacon
6 large Eggs
For serving:
salsa, sour cream, and guacamole
Directions:
Roughly chop the bacon.
Place a large skillet on the stove and turn the heat to medium.
Add the chopped bacon into the hot skillet, then cook for a few minutes until crispy. Transfer onto a clean plate lined with paper towels to drain excess grease.
Leave some of the accumulated bacon fat and remove the rest.
In a mixing bowl, add the cracked eggs and milk. Whisk until well incorporated.
Pour the egg mixture into the skillet together with the bacon. Cook for a few minutes until scrambled. Add salt and pepper to season.
Add a layer of shredded cheese over one flour tortilla, then top it with some of the egg and bacon. Sprinkle more shredded cheese over the egg-bacon layer.
Add another flour tortilla over the cheese.
Add the quesadilla into the skillet over medium heat, then cook each side for a few minutes until golden brown.
Transfer the quesadilla onto a clean plate. Slice into even portions.
Serve with guacamole, sour cream, and salsa. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 4 days or 3 months in the freezer.
You can add veggies to this recipe if you like. Make sure to sauté them first after you cook the bacon.
