This incredible recipe was given to me by my dear friend. I am so glad that I gave it a try. You should too!
Ingredients:
To tenderize the chicken
1 chicken breast
1 tablespoon baking soda
For the sauce:
2 tablespoons Chinese rice wine
1 ½ tablespoons soy sauce
2 tablespoons oyster sauce
3 garlic cloves – crushed
½ teaspoon sugar
½ teaspoon black pepper
½ c chicken broth – cold
11/2 tablespoons cornflour
For the Stir Fry
2 tablespoons oil
1 onion – peeled and chopped
1 c chopped red bell pepper
1 c chopped yellow bell pepper
12 raw large shrimp/prawns – shelled and de-veined
Directions:
Step 1: Slice the chicken into thin cuts.
Step 2: Add the chicken into a mixing bowl, then sprinkle baking soda on top. Allow the chicken to marinate for at least 15 minutes.
Step 3: Wash the chicken with water, then use paper towels to pat them dry.
To Make the Sauce:
Step 1: In a mixing bowl, add the ingredients for the sauce. Stir until well combined.
For the Wandering Dragon Stir Fry:
Step 1: Place a frying pan on the stove and turn the heat to medium-high.
Step 2: Add 1 tablespoon of oil and allow it to become hot.
Step 3: Add the chicken and cook for about 2 minutes or until almost done. Remove the chicken from the pan.
Step 4: Add the rest of the oil into the pan, then add the onion. Sauté for about a minute.
Step 5: Add the bell peppers and sauté until translucent.
Step 6: Add the shrimp as well as the chicken. Cook for 2 more minutes.
Step 7: Stir everything until well combined, then simmer until the texture of the sauce becomes thick.
Step 8: Cook everything for 2 more minutes.
Step 9: Serve hot and enjoy!
